Goma ae is chilled steamed spinach with sesame sauce . . . I cheat and make the sauce with tahini paste!
Tahini paste is nothing more than ground sesame seeds that comes in a jar. It’s a Middle Eastern food that is also used to make hummus. It is similar to peanut butter.
Ingredients: Organic spinach
Any color miso (white, red, brown, etc.)
Optional: sesame seeds
Steam the organic spinach in the microwave by putting it in a bowl with a few drops of water for 40 seconds to a minute depending on how much spinach. The spinach will deflate/wilt but it will still be green. I then use a spoon to spread the spinach and stick it in the freezer to chill while I make the sesame sauce.
Combine two parts tahini to one part miso with enough mirin to thin them down. If you don’t have mirin, water and a teaspoon of sugar are fine.
Once the spinach has chilled 20 minutes or so, take it out of the freezer and serve it with the sauce on top, possibly sprinkling with sesame seeds.
