Daily Vegan Lunch for 7 January 2013: Taco Pizza

INGREDIENTS:

1 pre-made pizza crust
1 can vegetarian refried beans
15 oz. can of tomato sauce
1/2 cup chopped onions
2 teaspoons taco seasoning

2 avocado’s worth of guacamole (about 2 cups)

DIRECTIONS: Stir the tomato sauce, onions, and taco seasoning together, set aside. Spread the crust with refried beans in a thin layer and top with tomato sauce, spread thinly. Bake topped pizza crust in the oven at 400 degrees for 20 minutes or according to package directions. Once you take it out of the oven, let it cool a little (5 minutes) before spreading guacamole over the pizza.
