Daily Vegan Lunch for 9 January 2013: Grilled Cheez Sandwich


SO GOOD… probably the fried bread LOL, I swear I love these much more than I ever loved grilled cow-lactation cheese, they’re tangy and crunchy where “normal” grilled cheese is cloying, soggy, and lame. These are the junk food end of the vegan spectrum, however, unlike cow-secretion sandwich, they have 2 kinds of nuts and oats in them and no saturated fat.

Even though nuts are high in calories, they have a weird effect: they make you lose weight. I’m not just saying this — scientific double-blind studies show that nuts increase satiety along with all their other benefits:

This recipe is my own invention but I never would have thought of it were it not for the great Ultimate Uncheese Cookbook by Jo Stephaniak.


2 Tablespoons ketchup
2 Tablespoons onion
1/2 cup walnuts
1/2 cup sunflower seeds
1/4 cup nutritional yeast
1/4 cup oats
1 and 1/4 cup water
2 teaspoons cornstarch
1 teaspoon turmeric (for color)
1 Tablespoon lemon juice

8 slices of bread for 4 sandwiches


Blend all ingredients except bread in a food processor or blender until very, very smooth, can take up to 5 minutes. Pour mixture into a saucepan and simmer over medium heat until thickened, stirring continuously, about 3 minutes. Spread on bread slice and top with other bread slice, it will go on like the world’s thickest mustard.

Add oil to a skillet or large frying pan on medium-high heat. Fry the sandwich on both sides until brown and crunchy. You can also save the cheez mixture for later in the fridge instead of making all the sandwiches right away.
