1 tablespoon vegan mayonnaise or vegetable oil
1 sweet bell pepper, yellow, green, orange, or red
1/2 an yellow onion, sliced
1-2 sliced portobella mushrooms
1 teaspoon taco seasoning (generic mix of cumin, chili powder, and garlic salt)
4 tortillas of any kind
Optional: condiments like vegan sour cream, salsa, guacamole, etc.
Start by melting vegan mayonnaise (or vegetable oil) over medium heat in a large fry pan or on a skillet. Turn heat to high and add bell pepper, onion, and mushrooms to skillet and fry until slightly charred, which will be less than 2 minutes.
Serve the mushroom mixture inside tortillas with lettuce, tomato, and condiments or if you have giant tortillas, roll them into wraps.
