Daily Vegan Lunch for 18 March 2013: Bean and Rice Burrito

If you’ve ever wondered what Taco Bell’s cheapest entrée would taste like with all-organic ingredients and fresh salsa, this is the recipe for you.

Bean and Rice Burritos

INGREDIENTS:

Refried beans, about one heaping tablespoon per burrito
Cooked brown rice, about one heaping tablespoon per burrito
Homemade salsa
Tortillas

DIRECTIONS:

Microwave tortillas for 20 seconds per tortilla. Assemble burrito by spooning rice and refried beans down the center of burrito slightly to one side in a line. You can add a tablespoon of salsa inside the burrito at this point or put the salsa in a separate, well sealed container if you are taking it on the road. Roll burrito by tucking in edges as you roll away from you.
