Daily Vegan Lunch for 22 May, 2013: Vegetable Noodle Soup

Not very elaborate… this is the type of soup my husband likes, he ate most of it!

simple vegetable noodle soup


6 cups water
2 vegan broth cubes
2 teaspoons salt or to taste
1.5 cups carrots, chopped
1 ribs celery (1 cup) chopped
1 cup onion, chopped

1 cup small noodles or broken-up spaghetti or linguine

Combine all ingredients EXCEPT NOODLES in a large pot and simmer for 30 minutes on medium heat covered with a lid. Turn heat to medium-high. Add noodles directly to soup about 20 minutes before you plan on eating it. Once noodles are tender, soup is done.
